Gorgon Nut Chops

·         


      Ingredients :-
·         50 gm gorgon nut

3-4 boiled arbi

1 tsp red chilli powder

1 tsp finely chopped green chillies

1 tsp finely chopped ginger

A pinch of mint chutney(optional)

Rock salt to taste

Ghee - for shallow frying

Method :-
Soak gorgon nut  in water for about 30 minutes, till they are soft. 
Then squeeze the water from the
gorgon nut  and roughly mash them in another bowl. 
Grate the arbi along with the seeds and mash them well together. 

Add the red chilli powder, green chillies, rock salt, ginger and mint, mix it well. 
Take bits of the mixture and make small flat patties out of them. 
Dab some ghee on a pan and shallow fry them till light brown.
Serve hot with mint chutney.

Creamy Gorgon Nut and Mushroom



Ingredients :-
200 gm mushrooms-fresh, sliced
1 cup roasted gorgon nut
1/2 cup spring onions-chopped
2 Tbsp butter
1 tsp oil
1 Tbsp refined flour
1/4 tsp black peeper
1 cup milk
1 tsp salt or to taste
1 Tbsp ajwain leaves-chopped fine or 1/2 tsp oregano leaves
1/2 cup grated cheese
1/2 cup cream

Method :-
Heat the butter and oil in a pan and add the onions.
Saute till onions are a little soft.
Add the mushrooms and gorgon nut and sauté for about half a minute.
Add the flour and turn around till the mixture leaves the sides of the pan.
Remove from heat and add the milk very gradually, stirring all the time to avoid lumps.
Bring to a boil and lower the heat.
Add the kali mirch, salt and ajwain leaves, simmer for a few minutes, add cream and serve, garnished with the grated cheese.

Gorgon Nut Mushroom Cashew Curry


Ingredients :-
100 gram GORGON NUT
50 grams whole cashew nuts
200 grams button mushrooms, drained
Groundnut oil to shallow fry GORGON NUT
50 grams ghee
1 tsp cumin seeds
200 grams onions
1 and a half tsp ginger paste
1 and a half tsp garlic paste
2 tsp black peppercorns
100 gram yogurt
3 tbsp coriander powder
One and a half tsp Kashmiri chilli powder
1 tsp turmeric powder
One and a half cups tomato puree
Salt to taste
1/2 tsp cardamom powder
A quarter teaspoon of mace powder
1 tbsp lemon juice (or 1 tbsp honey)

Method :-
Soak the cashew nuts in a pan with lukewarm water and drain.
If using fresh mushrooms, slice off the earthy base of the stalks and wash to remove grit. Boil water, add 1 tbsp lemon juice, blanch for 5-6 minutes, drain and refresh in chilled water until ready to cook.
As for the gorgon nut, heat oil in a pan, add the seeds, shallow fry over medium heat until they puff up. Remove and reserve in a pan of water until ready to cook.
The vegetables: Peel, wash, and finely chop onions. Clean, wash and chop coriander.
Whisk yogurt in a bowl,add coriander, Kashmiri chilli powder, turmeric and whisk to homogenise.
Heat ghee in a pan,add cumin, stir over medium heat until it begins to pop, add onions, saute till translucent, add the ginger and garlic pastes and stir fry till the onions are golden. Add black pepper and stir for a few seconds.
Now add the mushrooms, fry for a few minutes, add the yogurt mixture, fry until the fat leaves the sides, add tomato puree and salt. Add one and a half cups of water, bring to a boil, reduce to low heat, add cashew nuts and GORGON NUT, cover and simmer, stirring occasionally for 8-10 minutes.
Uncover, sprinkle the mace powder & cardamom powder. Remove, add lemon juice (or honey if the tomatoes are too sour). Adjust the seasoning.
Remove to a serving dish and serve with phulka or tandoori roti.

Gorgon Nut Green Peas Curry


Ingredients:
1 Cup Gorgon nut
1 Cup Green Peas
3 Medium Sized Tomatoes, Diced
2 Small Onions, Diced
2 Green Chilies, Chopped
1 Tsp. Ginger, Grated
12 Cashews, Halves
4 Tbsp. Canola Oil
1 Tsp. Cumin Seeds
Pinch of Asafoetida
1/2 Tsp. Turmeric Powder
2 Tsp. Coriander Powder
Salt to taste
1 Tsp. Red Chili Powder
1/4 Tsp. Garam Masala
Green Coriander Leaves, for garnishing.

Instructions:
Prepare ground paste of tomatoes, onion, green chilies and half cashews in grinder.
Heat the oil in deep kadai. When oil is hot enough, fry the Cup gorgon nut and remaining cashews till to golden. Drain them on kitchen towel to remove excess oil and keep aside.
Add cumin seeds and ginger in same oil and sauté for 1 minute.
When cumin starts splutter, add peas, ground paste, turmeric powder, coriander powder and red chili powder. Sauté till to oil comes on the top of gravy.
Add fried cashews, Cup gorgon nut and salt, and mix well. Add water or cream to adjust the thickness of gravy.
Add green coriander and garam masala for garnishing. Serve hot gravy with Indian bread.

Notes: If gravy consistency is thin, then add bread crumbs.

Gorgon Nut Rice --- Simple lunch recipes



Gorgon nut is really easy and perfect energy food. Perfect for kids or anyone's lunch box.

Ingredients:
Gorgon nut - 1 cup
Bastmati / Basmati rice - 1 cup
Buttermilk - 1 cup
Water - 1 cup
Salt to taste
Green chillies - 2
Red chilli powder - 1/4 teaspoon
Tomatoes - 2 (medium size. Chopped finely)
Onion - 1 (chopped finely)
Garlic - 8 pods (finely chopped)
Turmeric powder - 1/4 teaspoon
Cumin seeds - 1/2 teaspoon
Gram masala - 1/2 teaspoon
Cumin seeds powder - 1/2 teaspoon
Cashew Nut - 10
Kasakasa / khasakhasa / Poppy seeds - 1 teaspoon
Coriander leaves - 1 tablespoon (finely chopped)
Oil - 4 teaspoon ( I have used Olive oil)
Ginger - 1 inch (finely chopped)

Method:

Wash and soak the rice for 10 mins. Drain the water and keep it aside. Heat the kada /pan. Add 3 teaspoon of oil. Add garlic and fry till it is slight brown color. Add onion and fry till transparent. Add tomatoes,Green chillies and ginger. Fry till Tomatoes are mushy. Add cumin powder, gram masala, turmeric powder. Fry till nice aroma comes out. Add soaked Cashew and Gorgon nut. Switch it off. Let it cool down. Grind to smooth paste.

Heat the pan and rest of the oil. Add cumin seeds let it crackle. Add grinded paste, Chilli powder and salt. Fry for 2 mins. Add butter milk and water. Let it boil. Add rice and mix well. Cook it with lid on. When it is 3/4 cooked add dry roasted Gorgon nut and mix well. Cook completely. Switch it off. Add coriander leaves and mix well.

Serve hot with Raita / chips.

Gorgon Nut Curry



Ingredients
Gorgon nut - 2 cups
Tomato - 2 (medium sized)
Onion - 1 big
Ginger garlic paste - 1 tbsp
Cashews - 1/2 cup
Green Peas - 1/2 cup ( I used frozen )
Kasoori methi - 2 tsp (soaked in hot water)
Chilli powder - 1 tbsp
Coriander powder - 1 tbsp
Garam masala - 1 tsp
Turmeric powder - 1/4 tsp
Water -  3 cups + 1/2 cup (3 cups water can be adjusted according to the gravy thickness)
Oil - 3 tsp
Salt - as per taste
Lemon Juice / Rice vinegar - 2 tsp (optional, if you like little tangy taste, add it)
Coriander leaves - for garnishing (optional)
Cream - for garnishing (optional)

Method
1. Take the 
gorgon nut and dry fry it until crisp. Keep it aside.
2.Wash and soak the cashews in hot water for 15 to 20 min.
3. Grind the cashews with 1/2 cup water and make to a smooth paste and keep it aside. Wash the peas and keep it ready.
4. In a wok/kadai, add oil and when it is hot, add the onion. Fry them, till it is translucent. Add the tomatoes and ginger garlic paste and saute well, till the tomatoes becomes soft and the raw smell of ginger garlic goes off.
5. Switch off the flame and let the onion tomato mixture cools down. Grind this onion tomato to a smooth paste and again transfer to the kadai and start cooking.
6. Add the salt, chilli powder, coriander powder and turmeric powder and little water and cook, till the oil oozes out.
7. Add the cashew paste and cook for another 5 min. Add the kasoori methi or fenugreek leaves now and again cook for 2 to 3 min.
8. Add the green peas now and if the gravy is thick, add some more water and cover it. Let the green peas cook (might take another 4 to 5 min). Now add the garam masala.
9. Add the fried g
orgon nut now and mix thoroughly for 2 to 3 min and switch off the flame. Add the lemon juice now and mix it. (optional)
10. Garnish with coriander leaves and Serve the gravy with roti or nan.

Gorgon Nut Cashew Masala



Ingredients :-

1no Bay leaves
1inch Cinnamon
1no Black Cardamom
2no Green cardamoms
A pinch Mace
2nos Cloves
2nos Onions(medium sized)
2cups Tomato puree
1/2inch Ginger (grated)
5nos Garlic cloves
1tsp Red chilly powder
1/4tsp Garam masala
1cup Milk
2tbsp Cashew paste
1tsp Kasuri Methi
1cup Gorgon nut
20nos Cashew nuts
Salt
Oil
Method :-
Heat few drops of oil, fry the cashew nuts until they turns brown, remove and add 
Gorgon nut, fry in simmer for few minutes.

In a pan, heat few drops of oil, fry the bay leaves,cinnamon,cloves,cardamoms and mace until they turns brown.

Add the onions,ginger and garlic and cook until they onions turns golden brown, put off the stove.

Now take this in a blender, blend as bit coarse paste.

Heat few drops of oil, pour the blended mixture into it, add in the tomato puree, cook in simmer for few minutes.

Now add the turmeric powder, red chilly powder, garam masala, cook in medium flame until the oil starts leaving from the sides of the masala paste.

Add in the cashew paste,fried cashews, water and bring it to boil and put the flame in simmer.

Finally add the cream by stirring the gravy,cook for few more minutes.

Add the crushed kasuri methi, fried gorgon nut and salt, give a stir and cook in simmer for a minute.

Put off the stove.

Serve immediately with pulaos, naan or phulkas.

Gorgon nut roti - Healthy breakfast / dinner recipe


Ingredients

Wheat flour - 2 cups

Gorgon nut flour - 1 cup (Dry Roast the gorgon nut and grind to fine powder)
Salt to taste
Silken Tofu - 1 cup
Oil for show frying
Method:

Mix everything and required water to make a soft dough (same softness as chapati dough). Keep it aside for 30 mins. Take a lemon size ball and roll out to thin chapati

Heat the flat griddle or pan. When it is hot put the rolled chapati and drizzle oil around it. Let it cook till brown spot appear. Turn it over and cook other size. 
Serve hot with your favourite side dish.

Cooking Method:
1. Soak the nuts in water so that it gets soft and perfect for garnishing.
2. Heat ghee in a pan and roast the gorgon nut in low flame until it get crisp.
3. In a deep bottomed pan, bring the milk to boil and add gorgon nut to it and keep stirring until crispy gorgon nut mixed in the milk and the milk is reduced to half the quantity.
4. Add Cardamom powder the kheer and switch off the flame.
3. Serve it in a bowl; garnished with chopped nuts, which is soaked in water for atleast 2 to 3 hrs.
Note:
The nutritive value in Gorgon nut is so good that this can be given to kids in the form of kheer (pudding) or can also be served by just adding salt and little ground-pepper to the ghee-fried gorgon nut.
